摘要
Odorous substances, which can be present in paper and board food packaging and can cause tainting of the packaged food product, are identified and the various sources listed. Quality assurance tests to monitor packaging for unacceptable odors and a propensity to taint foods are discussed, together with analytical procedures for identifying the chemical nature of odorous and tainting substances.
