INFLUENCE OF SILYMARIN ON GLYCOSYLTRANSFERASES FROM LEUCONOSTOC MESENTEROIDES URE 13 AND Lm 28 STRAINS

摘要
A study of the influence of silymarin on the reactions catalyzed by glycosyltransferase enzymes from L. mesenteroides URE 13 and Lm 28 strains was performed. The results showed gradually increasing inhibitory effect by increase of silymarin concentration from 10 mg ml(-1) to 30 mg ml(-1). In the presence of 3% silymarin and at an optimal concentration of sucrose - 292 mM, the glycosyltransferases from URE 13 and Lm 28 strains retained 29% and 40% of their enzyme activity, respectively. In the presence of 3% silymarin in the reaction mixtures the enzymes from both strains showed predominant transferase activity which reached 97% at the 3rd h from the start of the reactions and to the end (24th h) remained above 92%.
