摘要：
The process of preparing collagen polypeptide by enzyme from the limed hide offal of cattle hides was presented. The factors influencing processes of hydrolysis were investigated. By determining molecular weight distribution and isoelectric point etc, it could be concluded that the hydrolyzed products of cattle hide by proteases mainly concentrated in certain molecular weight, and the molecular weight distribution of products contributed to processes of hydrolysis and kinds of enzyme used.
