摘要
The setting and application of product standards, two key elements of the Canadian Fish Inspection Program, are essential to processors, buyers, and consumers to ensure quality, safety, and fair marketing. The standards of the Canadian Fish Inspection Program are based on internationally recognized standards, specifically the Coder Standards for Fish and Fish Products. DFO Fish Product Standards define minimum acceptability for specified products for taint, decomposition, unwholesomeness, and other requirements. The focus of this paper will be on the sensory aspects of product standards.
