摘要
Mineral fortification has been at the forefront of the current health trends in the West. However a number of issues regarding fortification are still being debated actively. These include such complex areas as bioavailability dosage, choice of salts, interaction with other components, etc. The changing lifestyles and the growing concern about health has led to an interesting array of mineral-fortified products in both the food/drink and supplement sectors, primarily using different salts of calcium, magnesium, iron and zinc.
