Apparent molar volumes and rheological properties of amino acids in aqueous solutions

摘要
The partial molar volumes and the viscosity coefficients B of the Jones-Dol equation, which characterize the primary hydration sheath, were calculated from measured viscosities and densities of solutions of neutral amino acids. The influence of the nature of side amino acid radicals on water was studied. It was shown that hydrophobic hydration in dilute aqueous solutions stabilized the structure of the solvent.
