摘要
Analyzes were performed to detect the presence of Salmonella spp and the Most Likely Number of total coliforms and thermotolerant coliforms. The results obtained demonstrated the absence of Salmonella spp. and total and thermotolerant coliforms in all acai pulp samples, being in accordance with the standards recommended by RDC n degrees 12/2001 and considered suitable for human consumption. Therefore, it is of utmost importance to the continuous evaluation of the presence of microorganisms that can cause risks to the health of the consumer, guaranteeing hygienic-sanitary control, as well as the adoption of efficient preventive measures that reduce this contamination.
