摘要
This paper summarizes a four-year quantitative microbial risk assessment project. This project enabled: (i) to build a multidisciplinary collaborative approach, (ii) to generate a dedicated data collection concerning L. monocytogenes and French cold-smoked salmon, (iii) to propose various methodological developments, (iv) and to assess the exposure to L. monocytogenes of French cold-smoked salmon consumers.
