摘要
The brewery production is one of the main industries in the world, generating a huge quantity of waste and emissions, which could be controlled using a suitable environmental management plan. Regarding brewery solid waste or by-products, it is increasing the trend of reuse in several different ways. The present work makes an overview of the types of waste and emissions generated in the brewing industry, compares the properties of the two main by-products generated in the brewing -Brewer's spent grains (BSG) and surplus yeast (BY) - and their applications as food or energy source, and their biotechnological potential as a biomaterial and as an environmental remediation vehicle.
