Kaempferol-derived free radicals studied by electron paramagnetic resonance (EPR) spectroscopy

摘要
The flavonoid molecule is degraded rapidly by O-2 in alkaline solutions, yielding the p-semiquinone radical. Subsequent radicals are based on reactions of p-semiquinone and probably have structures with 2 or more aromatic rings. Although the flavonoid structure remains intact in radicals formed by oxidation with HRP/H2O2 or OH at pH7, their structures are probably dimers. Oxidation with O-2 - at pH 7, however, yields p-semiquinone-derived radicals.
