摘要
In discussion are fundamental ideas to qualityassurement in meat-processing factory. The consumer expectations to the quality products are submitted of permanently change. But that what anytime is valid for the idea of quality is that we can hold the promises we give. This point of view agrees with the definition of the term of quality from ISO-Norm (9000). The term of qualityassurement ist discussed especially that the quality capability of the production is realy depending from the concept existing inside the mainmanagement. There are fundamental three 'methods' to ensure the quality in the production: controlling the finished-products, as well as the raw-materials the step by step controlling of intermediate products and quite the respecting of technologies and proceeding instructions. Products with a constant quality are resulting if these three methods are acting together. Especially we set accent that the meat-processing production is even handicraftly casted. This means particular requests to the personalmanagement to realise the qualityassurement.
