We propose to relate the entanglement entropy of the three-dimensional collisions region of two ions moving towards each other with the multiplicity of particles produced in this region. We calculate holographic entanglement entropy of elongated and differently oriented relative to the beam-line three-dimensional regions, and estimate the multiplicity of particles produced in peripheral and central collisions. These qualities show significal fluctuations near the critical temperature for given chemical potential. The fluctuations themselves are strongly dependent on anisotropy and orientation.
