The aim of the present work was to improve the thermotolerance of acetic acid bacteria. In this study, a thermotolerant Acetobacter pasteurianus T24 was obtained through adaptive experiments. The strain T24 exhibited better growth at 40 degrees C in solid medium. The strain T24 exhibited rapid growth and the wild stain HN101 exhibited a longer lag phase at 40 degrees C in acetic acid fermentation than strain T24. Under the condition of low ethanol concentration, the highest acetic acid concentration produced by T24 at 40 degrees C increased by 18.05 % over the wild stain HN101. These results indicated that the adapted strain had acquired thermotolerance over the course of adaptation. Thus, this strain was used for acetic acid fermentation at high temperature. This work reveals the potential value for improvement in industrial vinegar production.
