摘要
This issue of Cereal Foods World (CFW) continues the Global Food System super theme introduced in 2019, describing the role alternative grains play in the global food supply. Alternative grains that have a marginal impact on the environment offer promising solutions to the competing challenges of feeding more people with diminishing resources in a chaotic environment. For perennial grains, buckwheat, quinoa, amaranth, pulses, and ancient grains to find their way into mainstream food products, the food industry must to turn them into food solutions that deliver on consumer expectations for taste, health benefits, convenience, and portability. In this issue, we explore various facets of alternative grains, from breeding to processing to consumer tastes and perceptions. We also delve into the practical aspects of how these grains can be incorporated into mainstream food systems to feed and nourish a growing world population.
