Problems and countermeasures of traditional Chinese restaurants

摘要
With the advent of the knowledge economy, knowledge has become the means and the basis in shaping and upgrading core competitiveness of restaurants. Today restaurants are not only the labor-intensive enterprises, but also the knowledge-intensive ones according to their operation philosophy, corporation culture, production art, dining-room design and pattern of service, etc. To achieve the sustainable development, restaurants must carry out the knowledge management, put the knowledge management into effect and create a knowledge management environment, motivate employees to transfer their knowledge and technologies into daily operation, production technology and market development efficiently. According to the investigation, the knowledge which restaurants need always exists in the links of their business chain and every employee. However, because of the different business goal and marketing environment, the requirement and expression of knowledge in different restaurant is various in their production and service. During recent years, though the revenue in some famous traditional Chinese restaurants have been raising, the benefits of most former brilliant enterprises decline and they meet a lot of problems in their operation. This paper suggests that the traditional Chinese restaurants will have no alternative but to carry out the knowledge management strategy to solve their problems based on the author's investigation, analysis and summarization.
