摘要
We can produce sufficient amounts of specific pea seed and potato tuber lipoxygenase (LOX) by fermentation in Escherichia coli to assess their use in a number of specific applications. This has also allowed us to gain a more fundamental understanding of their differences in behaviour from a comparative analysis of the recombinant enzymes and from the molecular modelling and production and analysis of specific active-site mutants. This article describes some of the properties of the recombinant LOX available and their potential applications in the agrifood, and possibly pharmaceutical industries.
