In the brewing process the milling system used for comminuting the cereals is essential for satisfactory milling results. Experiments were carried out in a brewery in order to investigate the operational behavior of a wet mill at its limits of performance. Grist throughput rates higher and lower than the nominal grist capacity of 10 t malt per h were handled and especially the influence of the malt transport with respect to the milling result was examined. Additionally, the temperature of the water moistening the grist was varied and surface pressure was exerted on different cereals to gain reference data for the behavior of the raw materials in the grinding slot.
