摘要
This paper presents a review on piezoelectric sensors, specifically quartz crystal microbalances (QCM) and the application of these sensors, mainly to the food industry. In this area, the qualitative and quantitative analysis has been strengthened by the development of powerful instrumental analysis techniques; however, the cumbersome procedures, the long analysis times and the high technological costs, call attention to propose innovative strategies parallel to the existing techniques. Sensors are tools that have mechanisms for the analysis of food composition, residues of agrochemicals, toxins, the presence of pathogens, the presence of genetically modified organisms, process control and environmental contaminants, among others, in real time.
